Verjus 2025 Fresh juice from green grapes
Right next to our press house is a young vineyard that we planted with Donauriesling. In the middle of the week, the average ripeness of these grapes seemed ideal for our purpose. A small area on the Neuberg, planted with Grüner Veltliner, was also selected for picking. Mind you, we are not yet talking about “vintage". Verjus is not wine, but the alcohol-free, very fresh, ‘green’ juice of grapes that are not yet fully ripe. It was already used in ancient times as a fine acidulant instead of vinegar or lemon juice. Harvested a little riper and therefore fruitier, its subtle aroma is reminiscent of grape blossoms and gooseberries. Combined with juices from fully ripe grapes, yuzu citrus fruit, or pomegranates, it provides the fascinating basis for our sparkling Grapester! Bründlmayer Verjus will be available again in our shop starting in September!
