Sekt Austria Große Reserve

Medium yellow-green, silver reflections, fine, calm mousse. Yellow stone fruit, a hint of greengage and yellow plum, delicate mineral nuances, subtle white-flower notes, a touch of arancini, inviting bouquet. Tight and elegant on the palate, white peach, lively, stimulating acidity, white apple, a lemony touch, vibrant and extremely youthful; shows excellent persistence, salty finish, with assured further aging potential. (Disgorged 29 Oct 2024 (9.5 years on the lees).
Chardonnay grapes were harvested in September 2014 from southeastern, calcareous soils (i.e.Spiegel) and cooler western slopes (Steinberg) lending both warmth and freshness to the wine. The acidity and maturity of the grapes were at the exact point of readiness when they were picked and placed in small crates and then pressed very gently in the cellar.

Maturation
Alcoholic and malolactic fermentation took place in stainless steel. In the following spring, the base wine was filled into bottles; in these, the second fermentation took place with the help of sugar and yeast. The sparkling wine stayed in contact with the yeast for 110 months before undergoing remuage (riddling) and, finally, dégorgement (disgorging) in our cellars.
